Smoked Gouda Mac n' Cheese

Serves 4 

INGREDIENTS

  • Fresh macaroni noodles
  • Aged cheddar, 1 cup shredded + extra 1/4 cup shredded
  • Smoked gouda, 1 cup shredded
  • Whole milk ricotta, 1 cup 
  • Whole milk, 2 cups 
  • Panko breadcrumbs, 1 cup
  • Unsalted butter, 1/2 stick approx 
  • Flour, 1/4 cup 
  • Salt and pepper
  • Hot sauce, optional 

Instructions

1. Saute onions in 1 tbsp butter until tender and set aside.

2. Cook noodles until al dente, drain. While the pasta is cooking, prepare the sauce and preheat oven to 350 degrees. Spray a 9x12” casserole dish with cooking spray and set aside.

3. In a medium-sized saucepan, melt 1/4 cup butter along with 1 tsp black pepper. Once bubbling, sprinkle in 1/4 cup flour. Stir to combine. Carefully stir in 2 cups of whole milk and cook until thickened, stirring consistently.

4. Stir in the onions, a dash of hot chili sauce if youʼd like, 1 cup ricotta cheese, 1 cup shredded cheddar, and 1 cup shredded gouda. Stir until smooth, taste and add salt if desired.

5. Pour sauce over noodles and mix. If you want your mac ʻn cheese less saucey, weʼll leave that up to you! Pour into prepared casserole dish.

6. Mix together 2 tbsp softened butter with 1 cup of breadcrumbs. Sprinkle over pasta and top with 1/4 cup shredded cheese. Bake for 35 minutes until sauce is bubbling. Enjoy!
